Pasta a la Kimmie
I visited Kimmie after work last Friday and we decided to cook up some dinner! We rummaged through her fridge and found some ingredients to work with. First, she prepared some campanelle pasta. Then we braised some broccolini and zucchini in a mixture of soy sauce, brown sugar, ginger, vegetable broth and pepper. We tossed it into the pasta and added some parmesan cheese and toasted pepino seeds on top. It was yumtown!!!
I love that Kimmie had a stock of fresh greens in her fridge. Such a health nut 🙂 And did you know you could use brown sugar to thicken a sauce?! She taught me that!
Pasta a la Jordan
Then on Sunday night, Jordan decided to cook dinner for us! He prepped the chicken with some salt & pepper, and pan-fried them in extra virgin olive oil and rosemary for about 10 mins on each side. He then popped them into the oven, continually basting them in the reduced olive oil & rosemary mixture for about 20 more minutes. I then blended together (his recipe): green onions, parsley, cilantro, lime and olive oil to make a pesto paste as his base. And that was it! It was simply divine. You outdid yourself once again, my love 🙂
