I got to Trader Joe’s with the intention of buying ingredients for chicken empanadas, but when I couldn’t find a few ingredients, I changed my game plan. I bought puff pastry dough, olive tapenade, mushrooms, cherry tomatoes, a red onion, and a can of diced tomatoes with green chilies…with the thought of doing a twist on turnovers. I got home and laid all the ingredients out and once again changed my plan…to little puff pastry pizza pies cause I thought they’d be easier to eat. For appetizer, we had some wine and cheese + charcuteries I also bought.
If I plan on making this again, I’d probably just use regular pizza dough. The puff pastry ended up getting a bit soggy with the toppings.
