Bought two cookbooks over the weekend. One is entitled Take Four, where each recipe requires only four ingredients. I also bought a pasta recipe book (I can’t wait to try that one!).
Tried my hand out at baking codfish with fennel butter – a four-ingredient recipe 🙂
- 3 tbsp chopped fennel
- 1/4 c butter
- 2 fillets of cod or dole
- 5-6 thinly cut lemon slices
I paired it with ginger long-grain rice and a light balsamic citrus salad. I give it 3 out of 5 stars. Jordan said he liked it :). Next time though, I’d blacken it after taking it out of the oven…in a little bit of garlic and butter. It needed more of a crunch.
